I am a huge fan of pancakes and I like to experiment with different ingredients and toppings, but at first I wasn’t so keen on the thought of spinach in pancakes. Surprisingly, they turned out amazing! This recipe is simple, nourishing and a great way to sneak in more greens.
Ingredients:
- 3 egg whites
- 1 yolk
- 1/2 tsp baking powder
- 3 tbsp oats
- 1/2 banana
- 1 tbsp Greek yogurt (or cottage cheese)
- 2 handfuls of spinach
- 1/2 scoop protein powder (I used vanilla flavor)
- stevia (sweeten by your taste)
Blend two egg whites so it forms a thick structure and put it in another bowl. Then blend all the other ingredients and stir them in carefully into egg whites. This will give that extra fluffiness to your pancakes. Bake them on medium heat.
I never thought about making savoury pancackes… definitely will have to give it a go! =)
