Strawberry hand pies with cream cheese and strawberries

Delicious, easy to make and cute-looking dessert with moist middle and
crunchy crust.


Ingredients:  DSC_1766
• 120g ground almonds
• 30 g butter
• 35 g of fine coconut flour
• 1 egg
• 5 g of psyllium husk
• 1 teaspoon vanilla essence
• 2 tablespoons of sweetener
• Pinch of salt
• Strawberries
• Cream cheese
• 1 egg for coating

In a food processor, process the almonds  into finely ground flour. Add fine coconut flour, psyllium husk, sweetener and a pinch of salt. Mix. Above the steam, melt the butter and add it together with one egg and vanilla essence to the dry ingredients. Form a ball with the dough and  wrapp it in a  plastic foil for food and place in the refrigerator for one hour. Then cut come strawberries into small pieces and drain excess water.
Cut  two bigger pieces of plastic foil for food, for rolling the dough in between them. For easier rolling, divide the dough into two or three parts. Roll it at about 3 mm thick, and then with a cup diameter of about 10 cm form circles. Whisk one egg and brush the lower circles. Spread a spoonful of cream cheese on the lower circle and spoon in the finely chopped strawberries. Carefully cover with the upper part, which again, brush with egg. The edges of the two parts gently press with a fork and then “stab” the upper part several time.  Bake on baking paper in the preheated oven at 170 ° C for 20 to 25 minutes.
