Crispy on the outside and soft on the inside is what makes these cookies a perfect treat. 😉
Ingredients (for 12 cookies, depends on the size):
• 100 g cashew nuts
• 50 g unsweetened shredded coconut
• 30 g fine coconut flour (you can also use oat flour)
• 1 egg
• Pinch of salt
• 20 g of coconut oil
• 1 teaspoon of baking powder
• 2 teaspoons of vanilla essence
• 40 g of dark chocolate
• sweetener – to taste if desired
Process cashew nuts with melted coconut oil in a food processor until smooth mass forms. Add one egg, a pinch of salt, shredded coconut, vanilla essence and baking powder and mix again. Sweeten with your favorite sweetener, if desired. Finally, add fine coconut flour and mix it with a spoon until well combined. Place in a refrigerator for at least 15 minutes. If you add oat flour, add more, if necessary, to get a compact mass suitable for biscuit formation.
Then chop dark chocolate and carefully mix it in a biscuit mass. Take a tablespoon of mass, put it on the palm, flatten in the form of a biscuit and place on baking paper. Bake cookies in a preheated oven at 160 degrees Celsius for 15-20 minutes or until golden brown.
