Valentine’s roulade

Perfect treat on Valentine’s day you can make for your better half. I am sure they will love it! 😉

Ingredients for the roulade:
– 4 eggs
– 50 g dark Cavalier chocolate
– 10 g coconut butter
– 2 tbsp SugarSweet stevia
– 2-3 tbsp milk
– 1 tsp vanilla extract
– 1 tsp baking powder
– 20 g protein powder (I used cookie flavor)
– 1 tbsp 100% cacao

Ingredients for the filling:
– 100 g frozen berries
– 2 tbsp SugarSweet stevia
– 100 g sour cream
– 100 g cottage cheese
– 100 g greek yogurt
– 120 g shredded coconut
– 30 g protein powder (I used vanilla)

Ingedients for decoration:
– 40 g white Cavalier chocolate
– 10 g coconut butter
– strawberries

Directions:

1. First, seperate egg whites from egg yolks. Beat egg whites into until stiff peaks form. With a handmixer mix together egg yolks with stevia. Then add melted dark chocolate and coconut butter and mix again. Lastly add vanilla extract, protein powder (you can add more cacao if you do not use protein powder), milk, baking powder, cacao and mix again. Then carefully mix in the egg whites. Spread the batter over parchment paper, approximately 0.5 cm thick and bake for 20-25 minutes on 160°C.
2. Then prepare the filling. In a mixer mix together all the ingrrdients for the filling (except for shredded coconut). Pour into a bowl and stir in shredded coconut. If you do not use protein powder, then add a bit more of shredded coconut to get desired thickness. Put in a refrigerator for an hour.
3. When roulade is colled down, spread the filling over it and carefully roll it up. Put into refrigerator to set.
4. Then melt white Cavalier chocolate and coconut butter over steam. With it decorate the roulade. I also added some heart shaped strawberries.
5. Wait to cool down and serve.
