- 1/2 cup oats
- 1 cup almond meal
- 2 scoops protein powder (I used cookies&cream flavor)
- 25g coconut butter (melted)
- 3 eggs
- 3 tbsp shredded coconut
- 1 tsp baking powder
- approx. 0.5 cup milk
- 1 cup frozen raspberries
Directions:
- In a blender mix 3 eggs, protein powder, almond meal, baking powder, shredded coconut and baking powder.
- Add melted coconut butter and mix again.
- Slowly add milk and mix to get desired consistency of the batter.
- On parchment paper place half of the batter and then top it with frozen raspberries.
- Cover with the rest of the batter and top with little bit more raspberries.
- Bake on 180 C/350 F for 30 minutes.
- Then place tin foil over the loaf and bake for another 20 minutes.
