Raspberry protein loaf

Ingredients: DSC_0022

  • 1/2 cup oats
  • 1 cup almond meal
  • 2 scoops protein powder (I used cookies&cream flavor)
  • 25g coconut butter (melted)
  • 3 eggs
  • 3 tbsp shredded coconut
  • 1 tsp baking powder
  • approx. 0.5 cup milk
  • 1 cup frozen raspberries

Directions:

  1. In a blender mix 3 eggs, protein powder, almond meal, baking powder, shredded coconut and baking powder.
  2. Add melted coconut butter and mix again.
  3. Slowly add milk and mix to get desired consistency of the batter.
  4. On parchment paper place half of the batter and then top it with frozen raspberries.
  5. Cover with the rest of the batter and top with little bit more raspberries.
  6. Bake on 180 C/350 F for 30 minutes.
  7. Then place tin foil over the loaf and bake for another 20 minutes. DSC_0014
